Indian Cooking Recipe : Canneloni Milanaise Style

Ingredients :
For the dough :
2 teacups maida
2 tbsp butter
¾ tsp salt

For the stuffing :
2 teacups mixed boiled vegetables (French beans, carrots, green peas)
1 teacup paneer (cut into small pieces)
1 tsp chilli powder
1 onion, chopped
2 tbsp oil
salt to taste

For the sauce :
900 gms tomatoes
3 tsp sugar
½ tsp chilli powder
¼ tsp oregano (optional)
3 tbsp fresh cream
salt to taste

For the topping :
1½ teacups white sauce
3 tbsp fresh cream
6 tbsp grated cooking cheese
salt and pepper to taste

Method :
For the dough :
Combine the maida, butter, salt and enough water and make a soft dough. Knead well and keep for 1 hour.

For the stuffing :
Heat the oil and sauté the onion for 1 minute.
Put the vegetables, chilli powder and salt and cook for a few minutes.
Remove the vessel from the fire and put the paneer pieces.

For the sauce :
Chop the tomatoes into big pieces and cook without adding any water.
When cooked, take out a thick soup by passing through a sieve.
Put the sugar, chilli powder, oregano and salt and simmer for at least 15 minutes. Put the cream.

How to proceed :
Roll out the dough into big thin chapattis with the help of a little flour.
Cut into broad strips. Boil plenty of water in a big vessel.
Put 1 tbsp of oil to the boiling water. Cook a few strips at a time in the boiling water and take out after ½ minute.
Pour a little of the prepared sauce in a greased baking dish.
Place some of the strips over the sauce. Sprinkle half of the stuffing over the strips.
Pour a little sauce again. Again keep some strips over the sauce.
Sprinkle the balance stuffing over the strips.
Keep the remaining strips on top. Put the cream, salt and pepper to the white sauce and spread over the strips.
Sprinkle the cheese over the sauce and dot with butter.
Bake in a hot oven at 450ºF for 20 to 25 minutes or until it turns golden brown.
Ready to serve hot.
